Happy Thursday everyone! I have been officially inside my apartment in Southern California since Friday afternoon when I picked up my son from school for the last time. It’s been almost a week, and what a week it has been!
Here’s what I did last Friday, after my kids were at school… I went to the grocery store in the hot mess and grabbed a few things to finish prepping our family for staying at home as much as possible in the next weeks. Then, I went and grabbed my daughter’s prescription refills that were ready at the pharmacy. After all that, I hit up the library grabbing a couple extra books for my son to have during our self quarantine lockdown. It all seems so normal, but yet, so far away now. It’s crazy how much our world has changed in a week!
As I haven’t been to a grocery store in a week, I’m not sure how the meat departments are doing. I have seen posts where they are raided and empty as well. I’m going to be focusing a lot on meatless meals on the blog. The original Greatest Generation that I’m basing this site off of did “Meatless Tuesdays” and “Wheatless Wednesdays” to help decrease demand on products that we were being sent overseas to soldiers in WWII during the war effort.
I’m challenging you to do the same. (I’ll have to write another blog post about this). It’s great for your health and for the environment to eat less meat. Today I’m bringing you a meatless meal option you can have for lunch.
I don’t know if I have run across yogurt parfaits with walnuts in them before. Fruit is obviously a popular toping for yogurt parfaits, free to add fresh strawberries, blueberries, slices of banana, etc.. if you have some.
For me, the walnuts have a nice, medium crunchiness about them. They are not super hard which makes them pair really well with the yogurt and adds some more protein to the mix.
Yogurt (mine is vanilla Greek yogurt)
1/2 cup Life cereal (or similar/granola)
1/4 cup chopped walnuts (or other nuts)
1 Tbls. ground flaxseed
Scoop yogurt into a bowl, top with cereal and walnuts. Drizzle desired amount of honey on top. Enjoy!
Notes: I didn’t measure out the amount of yogurt in my bowl. Scoop what you’ll eat. Use the cereal and walnuts as the filler for this meal.
