OH EM GEEE!  It’s already the last week of June and then summer is 1/3 of the way done!  Seriously, where does time go?  I have so many things on my summer bucket list with my son to do!  We need to visit the Minnesota Zoo, Como Zoo, play at Baker Park, get raspberry shakes at Peppermint Twist, go to the Minnesota Children’s Museum, visit some splash pads, make s’mores, etc… there is a list and I’m determined to get through most of it with him.

Honestly, I gush about him all the time.  He is great.  So kind and so smart.  He is a go-with-the-flow type of kid. (Well, most of the time… unless he is tired or hungry, but can you blame him?)  He is just a fun-loving kid looking to have a good time.  As we are frequently driving to therapy sessions for my daughter, I really try to make special time for him and give him extra attention when I can.  It can’t be easy to be the bigger brother when his younger sister has medical issues and other special needs.  He does it well tho, and for this I feel like he needs to know that he is getting special treatment too.

While I (like most moms) am giving 110% effort to my kids, I try to give myself breaks too.  I am a big fan of trying new cocktails, painting my fingernails, taking bubble baths, drinking red wine, doing DIY projects, and having Netflix and chill evenings.  This is one of those  Netflix and chill evenings with a cocktail.  So, I mixed myself up a Paloma.

Grapefruit juice and tequila.  It is a tasty combination.  Perfect for a warm summer night.  Personally, I like the bitter taste of them together.  I didn’t need to add a sweetener to the mix (except for some sugar on the rim of the glass).  Feel free to add some simple syrup or a splash of lemon-lime soda to your drink to help sweeten it up.



1 shot of tequila
6 ounces (about 3/4 cup) grapefruit juice (I used store bought, feel free to be fancy and squeeze your own fresh grapefruit juice)
juice from 1/4 lime
sugar, to rim your glass with
optional: splash lemon-lime soda or simple syrup to sweeten drink

1. Pour about 2 Tbls. sugar into a bowl large enough to fit your top rim of your glass.
2. In another bowl, add a small amount of water.
3. Dip the top rim of your glass in the bowl of water and then into the sugar.
4. Fill glass with the remaining ingredients and stir slightly.
5. Enjoy!
